What’s Pouring Now: A Changing List for the New Season
With the shift in season comes a quiet change behind the bar at Opal Wines. Bottles move on. New ones take their place. The list rewrites itself, slowly and deliberately.
As evenings grow cooler, we lean into wines with a little more depth — reds that work well with a light chill, whites with texture and grip, skin-contact wines that sit comfortably alongside richer plates. You’ll still find freshness and lift, but with a softness that suits longer nights.
Our by-the-glass selection remains short and responsive, changing as bottles open and close. Some wines appear for a single weekend. Others stay just long enough to become familiar before disappearing again. Alongside these, our Opal Wines house pours continue to feature when in season, offering a steady thread through the wider list.
We don’t believe in fixed menus or permanent favourites. Wine is alive, and our list reflects that — shaped by availability, curiosity, and what feels right to pour now.
